Guess what? It’s Monday, and you know what that means! Oh, you don’t? Well, it means it’s almost Tuesday- TACO TUESDAY! Please tell me this is a weekly holiday for everyone else, it is, right?
Ok, back on track. Tacos. I love ‘em! Especially when they’re vegetarian tacos because then I can eat them! This recipe not only includes homegrown veggies, but homemade taco seasoning. Oh yes, you most definitely should stay tuned for this.
1 bag (12 oz) Vegetarian Meatless & Soyless Grounds (or real meat, if you’re into that
1 Medium Tomato (or 2 if you’re a big fan)
Green, red, and yellow pepper -chopped. I keep my peppers chopped and frozen so they’re always on hand.
2 TBSP Taco seasoning
Taco shells
Salsa
Sour Cream
Shredded Cheese
Lettuce
To start off with, let’s get you making your own healthy and delicious taco seasoning. Have you ever read all of the ingredients in those packets of store bought seasoning? I have, and I very quickly stopped buying and started making!
Taco Seasoning (this will make more than enough for 1 bag of Meatless Grounds)
2 tsp onion powder
1/2 tsp sugar
1 tsp ground cumin
1 tsp oregano
1 TBSP chili powder
1 tsp garlic powder
1 tsp paprika
1/4 tsp salt
-If you make this and think it is too spicy, add another small dash of sugar to tone down the spice, or you could be a man and embrace the HEAT!
Since the “meat” isn’t raw, just simmer over a medium heat with a splash of olive oil (or water) for about 10 minutes- stirring occasionally.
Once the “meat” is cooked through- I taste test and check for some extra browning on the pieces- rinse and drain.
Add the chopped peppers and tomato- as much as you’d like- as well as the seasoning.
If the veggies are fresh, you don’t necessarily need to add them into the pot to cook, but they taste so much better if you heat them up with the “meat” and get some of that precious seasoning mixed in there.
Once everything is pretty well cooked and looks to die for- remove from the heat and ASSEMBLE!
I prefer soft shells, so I heat those up in the microwave for about 30 seconds- or you can char them in a skillet to get some more flavor out of them.
I prefer simple toppings- sweet and spice salsa, cheese, and sour cream. I occasionally add lettuce- but this ain’t no salad!
Here is an extra bit of taco expertise- assemble the taco like a Chipotle burrito! Tuck the sides in and then roll the top over, and squeeze it all together.
(I overstuffed mine, so they didn’t stay looking like a burrito for long)
Just don’t get too excited and over fill them like I did- or you’ll have a casualty and have to double wrap.
Also, does anyone else use an extra taco shell as a net for droppings? I always like the surprise of finding an extra taco ready to be eaten on my plate.

Oh, this sounds really good! As a vegetarian, have you ever tried TVP - Textured Vegetable Protein? We aren’t vegetarians, but like to pack more protein than calories, so I use this in anything I can, like spaghetti sauce, sometimes chili, and I have used it in homemade tacos or salad. It’s best with saucy dishes that have a lot of flavor going on, because the TVP doesn’t have much flavor on its own. It’s also quite inexpensive. I usually get it in the bulk food section of Sprouts, Whole Foods or Wynco, but it is also sold by Red Mill & can be ordered online. It was such a secret item to me that now that I know about it, I like to share the news.

I’ve never heard of TVP! I’ve been a vegetarian for 12 years and am surprised that I haven’t heard of this! We don’t have any of those stores here in Central Illinois But I’ll check it out online and maybe try it! Thanks for stopping by and sharing this with me!
