Hey ya’ll, I’m back with another delicious recipe!
Beef Stroganoff was my brother’s favorite dish and my mom always made me my own special meat-free plate!
I recently decided to try to spice the recipe up by adding some seasonings, and some vegetarian ground burger, and let me tell you, this dinner will fill you up and keep you warm this winter!
*Excuse the lack of photos for this recipe, I figured you didn’t need to see photos of me boiling noodles and would much rather see photos of the delectable dish! 😉
Vegetarian “Beef” Stroganoff
Ingredients:
- Ground Meatless Crumbles (Boca and Quorn brand both carry this product)
- Egg Noodles
- Onion Powder
- Sour Cream
- Cream of Mushroom Soup
- Vegetable Stock
- S+P
- Parsley
1. Boil a pot of water and cook the egg noodles.
2. While the noodles are cooking brown the meatless crumbles in a splash of EVOO. Season with some S+P.
3. Once the crumbles are browned and cooked, Mix in one 1TBSP of vegetable stock (for flavoring).
4. Bring to a simmer then add a can of Cream of Mushroom soup, 8oz of Sour Cream, 1 tsp. of Onion Powder, 1 tsp of parsley, 1 tsp of S+P (optional) and 1/4 cup water (optional, if the sauce is too thick add the water).
5. Bring all of these items to a low simmer and let cook while your egg noodles finish cooking.
6. Once everything is done and the noodles are drained, plate the dinner and top with a sprinkling of parsley.
